Stew lamb leg by pressure cooker

1. Ingredients:
- 1/2 Lamb leg 
- 1 potato, 2 carrot, 2 small onion, 1/4 celery
- Garlic, rosemary, sage
- Salt: 2 spoon, peper 
- 2 cups of water
- 2 spoons of oil

2. Method:
- Marinate lamb meat with 1/2 rosemary, salt and pepper for 15 to 30 minutes



- Cut potato, 2 carrots, 1 onion into stew size


- Chopped a  garlic, celery, sage and 1/2 rosemary 



- Preheat the pot with 2 spoons of oil at medium heat, cook each side of the meat until brown (5 mins each side)


- Take the meat out, add chopped vege, and stir well until the onion get transparent 



 - Add meat, and the other vege, add one more spoon of salt and 2 cups of water. Close the lid, use high heat, after 10 minutes, use low medium heat for another 30 minutes (make sure the indicator is not over orange color)



- Here is the result after cooking:

Roast lamb rack

At Trader Joe's, it's easy to find frenched lamb rack. For two people, buy a small pack, around $13 is enough.

1. Ingredients.
- Lamb rack: use a small knife, separate racks it into piece
- Butter: 1/2 spoon or use olive oil
- Seasoning: 1 tea spoon salt (better to use sea salt),black pepper (few) and 1 tea spoon of  Thyme, rosemary, oregano, basil. You can find dried one in Trader Joe's, too.
- Lemon: 1 small piece

2. Method:
- Ground all season (if you can)
Here it how I do with a Japanese grinder bowl

- Mix seasoning with butter then rub the mixture to lamb rack, marinate for 30-60 minutes.
- Roast at 400 degree for 15 mins, then turn the meat, and roast at 300 degree for 5 mins.




You can add some drop of lemon juice

Slow cook lamb with baking oven


Recently, I bought this amazingly good baking dish from Le Creuset at T.Jmax with a so good price: just around $17, cheaper than any online store. This time, I use this one to cook a lamb dish. This kind of food is good for winter time, because lamb is considered as "hot" food, it can warm your body up. The cooking process is easier when I use Breville Compact Smart Oven

1. Ingredients:
- 1 pack of lamb meat (you can use lam stew, lamb chop, vvv). I bought this one from Trader Joe's.


- Spices: I use of 21 salute seasoning from Trader Joe's and  cumin as main seasonings: 1 spoon for each, plus dried basil, oregano, sage: 1 tea spoon each . 

Also: salt and black pepper: 1 tea spoon for each

- Vege: 1 potato, 1 carrot, green bean, 1 sliced shallot, 1 chopped onion, sliced mushroom (1/2 pack)

2. Method
- Preheat a pan with 1 spoon of oil, than add the meat, if you use nonstick pan, you even don't have to use oil 


- Cook each side for 10 minutes ( if you are in a hurry, cook for 5 mins), when you turn to another side, add sliced shallot 

- Take the meat out, put them in to the baking dish, and add vege and seasoning to pan, stir well for 3 mins, add 2 cups of water, and wait until it is broiled. At this time, you can preheat the oven at baking setting: 375 degree 



- Pour the mixture to the baking dish


- Cover it with foil, and bake it for 1 hour.


And here is the result: perfectly beautiful!




Eat with bread or rice is both suitable! Serve with some drop of lemon juice!

Ps: If your room is too smelly after cooking and eating this dish, use this trick: put several slices of lemon to a pot of water, broil it, let the steam bring the lemon fragrance spreading around your kitchen, it will take all other smells away!

Stew lamb for a winter day

The winter is coming, it's time for a lamb dish. It will warm you up in a windy and rainy day (like today). I use Asian style to cook with help from my best slow cooker: Breville Risotto Plus

1. Ingredients
- Lamb: 1-2 pounds, cut into stew size. 

- Spices: 
      + Rock sugar: several piece
      + Black pepper
      + 1 spoon Cumin powder (or roasted cumin seeds, I prefer the powder because it's easy to eat)
      + Chinese cheese (red fermented rice/tofu) (it's very salty, put 1 spoon is enough, then you don't have to use salt)
      + Chili powder (you can't it spicy, don't use it)
      + 1 tea spoon ground nutmeg

- Vege: Chop all these vege: 1/2 onion, 2 green onions, 1 piece ginger, 5 gloves of garlic, 1 shallot




      
2.Method

 - Use saute setting
- Preheat for 2 minutes
- Add 1 spoon oil and wait 1 minute
- Add all chopped vegetables, stir frequently for 2 minutes


- Add all spices and stir well for another two minutes


- Add lamb and stir well until all the meat outside change to bright colour.


- Add water to cover the meat. Wait until it's broiled for 10 minutes, then change to slow cook mode (I prefer slow cook high, faster).
- Wait for 3 hours, or just 2 hours if you cook for 15 mins before change to slow cook mode.
